Explore 

Where to start?! This is simply a beautiful country all around. I visited on holidays many years ago and decided to move to Cape Town right after as I completely fell in love with it. I would definitely recommend to spend at least 10 days if not 2 weeks minimum to really take time and explore the great variety of sceneries that this country has to offer.
I would start from Cape Town and from there explore the city and its surroundings and enjoy the beautiful beaches, mind you the water is extremely cold so swimming is not really an option, but surfing in a wet-suit is definitely on the top of the list.
From Cape Town (CT) you can rent a car and drive to the Winelands, exploring the different wineries and the beautifully green countryside. 
I would allow probably couple of days int eh Winelands and take time there to enjoy the wine and food in the laid back environment.
From here you could drive down to the Garden Route and take a nice road trip for few days on the coastline with a few stops on some of the top spots I list below.
A safari is a must when down under , South Africa has probably some of the best safari lodges in the World, so I highly recommend it, is a magical experience , being fully immersed in nature and really experiencing the wildlife in their real environment.
There are few more places I highly recommend to see , if you have enough time and can add extra stops on your journey. I have listed them here below together with the highlights of Cape Town and Garden Route.
